I don’t know about you, but I have simply not felt like cooking. I’ve been lazy, taking every possible shortcut that doesn’t require me to buy more groceries. This week’s recipe leans into the laziness, jazzing up rotisserie chicken for a meal that has a high impact to effort ratio. You’ll find that below.

Rotisserie Chicken Gyros
Serves 2
These gyros bring everything you love about the dish: crispy rotisserie chicken, creamy tzatziki, fresh tomatoes, crunchy red onion and Romaine lettuce, and feta, all wrapped up in a pillowy pita. The best part? It all comes together in about 15 minutes.
Ingredients
2 tablespoons olive oil
1 cup shredded rotisserie chicken
1 teaspoon Greek seasoning
¼ cup red onion, diced
½ cup Romaine lettuce, shredded
1 Roma tomato, sliced
¼ cup tzatziki
4 tablespoons feta, crumbled
2 pitas
Instructions
Heat oil in a medium skillet over medium-high heat. While the oil is heating, add the chicken to a medium bowl and top with Greek seasoning. Stir to coat the chicken in the seasoning. Add the seasoned chicken to the skillet. Let cook undisturbed for a minute, then stir. Cook for 3-5 minutes, stirring every minute or so, until the chicken starts to get crispy.
Warm the pitas in a skillet over medium-high heat for 30 seconds on each side.
Assemble the gyros. Divide the chicken between the two pitas, scattering it over the top of each pita. Add the sliced tomatoes on top of the meat, then add the lettuce. Spoon tzatziki over each gyro and top with feta. Enjoy!
Notes
You can use homemade or store-bought tzatziki. If you’re buying it at the store, you can typically find it in the refrigerated section near the deli. Try this recipe if you’re making it at home!
I go back and forth between Penzeys and Spiceology Greek seasonings. Both are delicious! I use them often. If you don’t have Greek seasoning and would rather not buy it, make your own or substitute your favorite seasoning. Lemon pepper, seasoned salt, or garlic salt would all work!
